Total Time: 30 Minutes, Servings: 12 Servings
Ingredients :
- 12 large eggs, beaten
- 1 cup cheddar cheese, shredded
- 2 cups fresh spinach leaves, chopped
- 6 slices bacon, cooked and chopped / 1/2 cup bacon bits
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions :
- Mix together all the ingredients and whisk until smooth
- Grease a regular size muffin tin and fill each cup about 2/3 of the way full
- Bake at 350 degrees F for 20-23 minutes or until a knife inserted in the middle of a muffin comes out clean
- Cool for 5 minutes before prying muffins loose
- Dish and serve hot
